চিতই পিঠা কী What chitoi pitha is
চিতই (বা চিতই পিঠা) চালের গোলা বিশেষ গর্তওয়ালা কড়াই বা বাটিতে ঢেলে সেঁকে তৈরি গোল পিঠা। উপরটা নরম, নিচটা হালকা বাদামি। এটি ভাপা পিঠার মতো পুরভরা নয় — আকার ও সেঁকার পদ্ধতি দিয়ে চেনা যায়। Chitoi (chitoi pitha) is a round cake made by pouring rice batter into a dimpled pan or bowl and searing it. The top stays soft; the underside browns lightly. Unlike bhapa pitha it is not typically stuffed—you know it by shape and the pan.
আঞ্চলিক রূপ Regional forms
কিছু অঞ্চলে চিতইয়ের উপর ডিম ভাজা হয়; অন্যত্র গুড় বা নারকেল দিয়ে মিষ্টি করে খাওয়া হয়। নাম ও বাহার জেলাভেদে আলাদা — একক “সঠিক রেসিপি” নেই। শীত ও পিঠা মৌসুমেই এটি সবচেয়ে ঘরের খাবার। In some districts an egg is cooked on top; elsewhere chitoi is eaten with jaggery or coconut. Names and toppings vary—there is no single correct recipe. It is most at home in winter and the pitha season.

চিতই পৌষ–মাঘ এবং শীতের পিঠা তৈরির রীতি-র অংশ। মেলার ভাপা বা পুলির পাশাপাশি এটি প্রায়ই ঘরের কড়াইয়ের পিঠা। Chitoi belongs to Poush–Magh and to winter pitha-making. Beside fairground bhapa or puli, it is often the pan on the home stove.

দুধচিতই চিতইয়ের সঙ্গে দুধ বা পায়েসের মিলন — আলাদা পরিবেশন। মূল চিতই শুকনো সেঁকা পিঠা। Dudh chitoi serves chitoi with milk or a payesh-like bath—a different presentation. Plain chitoi is the seared cake itself.
